On an average day, I tend to have way more recipe ideas in my head than I do time or oven space. I’m grateful for my own kitchen and my double oven, but that still doesn’t seem to be enough.
Enter my brand-spanking new Excalibur dehydrator, recently given to me by a wonderful friend.

Aside from the Raw Mini Pie Challenge testing extravaganza that occurred over the weekend (we’ll be announcing the winners tomorrow!), Lisa and I also put on one heck of a raw dessert demo at the 27th annual Vegetarian Food Festival at Harbourfront Centre.
This particular festival has had a special place in my heart since moving to Toronto in 1998.

I’m starting to gear up for the first-ever Vida Vegan Blogger Conference happening in a little over a week. Words can’t describe how excited I am. When I heard about it almost a year ago, I immediately bought a ticket and started planning a vegan girls’ getaway, which will include three days in Portland and five days in San Francisco. On my way home, I will also be making a three-day stop in British Columbia for my good friend Anita’s wedding.

In the spirit of easy, no-bake summer treats, this raw macaroon recipe is made simply by dehydrating a mixture of dried coconut, dates, agave nectar and coconut butter, along with whatever flavourings you prefer.
