Hi, I’m Nicole. Welcome to my little space. I’m so glad you’re here!

I’m a Canadian writer, editor, photographer, and mother of three quirky rescue cats, Leola, Eli and Zoey. I love animals too much to eat them, and years ago I discovered that teaching others through food is an incredibly effective outreach tool. I began developing wholesome, all-natural vegan recipes to inspire others to think differently about what they eat, and this blog is my growing collection of favourites.

In 2010, I had the opportunity to perfect my craft by completing the Vegan Baking Boot Camp Intensive training program at the Natural Gourmet Institute in NYC. In 2012, I became certified in Plant-Based Nutrition through Cornell University’s Center for Nutrition Studies.

As a vegan for 20 years, I can tell you from experience that this lifestyle is not about restriction or deprivation—you won’t be doomed to a life of lettuce and tofu. A plant-based diet is abundant in wholesome, filling foods with exciting flavours, all of which can satisfy your hunger and cravings without harming your health, the environment or the animals. Just Google the words “vegan recipes” and you’ll see what I mean. On this blog, specifically, you’ll find a lot of wholesome treats, like chickpea cookie dough balls, chocolate avocado cupcakes, and flourless chocolate chip cookies, along with a handful or two of savoury things like easy butternut squash and kale risotto, wild leek and potato soup, and quinoa and kale with baked ginger tofu.

Aside from spending long hours in the kitchen, I enjoy strength training, nights out with friends, kombucha, hummus with everything, Matt+Nat crossbody bags, and getting lost in large, overstocked antique markets. I tend to overthink everything, am forever shuffling my 90s “retro” playlist, might be too detail-oriented for my own good, and would give my right arm to live in a world where slaughterhouses don’t exist.
