<p>I&#8217;m back after spending five days in hot and humid Austin, Texas with some of the best people in the world. I was there to attend <a href="http://vidavegancon.com/">Vida Vegan Con</a>, an incredible conference that brings together vegan bloggers, cookbook authors, entrepreneurs and other such influencers to network, eat awesome food and share secrets of success.</p>
<p>Travelling to a new place and being in a large social setting where I don&#8217;t know people well is a really scary thing for me. I&#8217;m naturally a very shy girl and can easily become overwhelmed with anxiety, especially around those who are popular and outgoing. I feel somewhat intimated and, well, <em>awkward</em>.</p>
<p>I somehow managed to work through the fear to attend what was the trip of a lifetime, for the third time&#8212;this was the third and final VVC and it was one I will never forget. Of course, once I got there it wasn&#8217;t nearly as hard as I imagined it would be. Since I had met many of my online friends in person during previous conferences, it was like one big, happy reunion. And it was bittersweet.</p>

<p>As my dear friend JL Fields captured in a <a href="http://jlgoesvegan.com/vegan-news-you-can-use-53115/">periscope video</a> she created during Saturday&#8217;s lunch gathering, conferences like these are all about building community. Sure, the conference sessions are wonderful and insightful and it is clear how much time and effort the organizers spent taking care of every last detail, but what was most apparent was how much love and compassion radiated from each person I spoke with. I realize now more than ever how essential this community is to my life, because I wouldn&#8217;t be able to grow my efforts in changing the world for animals without their encouragement, steady engagement and ongoing support.</p>
<p>And the food, my goodness. What a feast it was! Just imagine an entire buffet of deliciousness that is <em>all</em> vegan (no labels to read and no need to inquire about ingredients!). There were some pretty fantastic vegan cafes in the area, and I particularly loved our visit to <a href="https://instagram.com/p/3U94ZowEzR/?taken-by=adashofvegan">Counter Culture</a>.</p>
<p>Now that I&#8217;m back at home, I&#8217;m getting reacquainted with foods outside of a soft taco shell. I&#8217;ve been enjoying lighter fare, like this delicious bowl of zucchini noodles with homemade pesto and protein-rich poppers. This is the perfect meal for warm spring and summer nights. From the juicy roasted tomatoes, the freshness of the basil pesto and the zestiness of the quinoa poppers, every bite screams &#8220;hello summer!&#8221; It&#8217;s light and refreshing and bursting with flavour. <span id="more-9028"></span></p>

<p>If you don&#8217;t own a spiralizer, you can just as easily thinly slice your zucchini into ribbons using a mandoline, and it will be just as gloriously delicious.</p>
<p>I should note that the quinoa poppers make more than you will need, so feel free to store leftovers in the fridge or freezer and add them to salads or pasta sauce or serve as a snack alongside your favourite dip. You can also make the poppers and pesto ahead of time (the night before, for example) so all you&#8217;d need to do is spiralize the zucchini and you&#8217;re good to go. Enjoy!</p>

<div class="ingredient"><h4>For the quinoa poppers:</h4>
<ul>
<li>1 cup water</li>
<li>1/2 cup white quinoa, rinsed and drained</li>
<li>1 (19oz.) can cannellini beans (about 1 3/4 cups), drained and rinsed</li>
<li>1/2 cup rolled oats</li>
<li>1 tablespoon Dijon mustard</li>
<li>2 teaspoons tamari</li>
<li>2 teaspoons fresh thyme leaves</li>
<li>2 teaspoons fresh lemon zest</li>
<li>1/4 teaspoon lemon pepper or ground black pepper</li>
</ul>
<h4>For the basil spinach pesto:</h4>
<ul>
<li>1 cup chopped fresh spinach, lightly packed</li>
<li>1 cup chopped fresh basil, lightly packed</li>
<li>1/4 cup walnuts</li>
<li>1 small clove garlic</li>
<li>2 tablespoons nutritional yeast</li>
<li>1 tablespoon fresh lemon juice</li>
<li>1/4 teaspoon sea salt</li>
<li>1/8 teaspoon ground black pepper</li>
<li>2 tablespoons olive oil</li>
</ul>
<h4>For the noodles:</h4>
<ul>
<li>2 zucchinis, spiralized into noodles</li>
<li>1 cup grape tomatoes</li>
</ul>

<div class="instructions"><h4>To make the quinoa poppers:</h4>
<ol>
<li>Preheat the oven to 350F and line a baking sheet with parchment paper.</li>
<li>In a small saucepan, bring the water to a boil over medium-high heat. Add the quinoa, reduce the heat to medium and cook, stirring occasionally, until the water has completely absorbed and the quinoa is tender, about 10 minutes.</li>
<li>Transfer the quinoa to a food processor along with the remaining ingredients. Process until it turns into a thick, smooth paste.</li>
<li>Scoop out 1 tablespoon of the mixture and form into a ball. Place on the prepared baking sheet. Repeat with remaining mixture. You should get about 20 balls in total. Bake for 30 to 40 minutes, depending on how crispy you like them. I like them crispy on the outside and soft on the inside, so I bake them for at least 40 minutes. You can bake them for less time if you'd like. At about the 20-minute mark, add the grape tomatoes to the pan, and bake until shriveled and nicely roasted, about 15 to 20 minutes. While they bake, you can go ahead and make the pesto.</li>
</ol>
<h4>To make the basil spinach pesto:</h4>
<ol>
<li>Using a food processor, process the spinach, basil, walnuts, garlic, lemon juice, salt and pepper until coarsely chopped, stopping to scrape down the sides of the processor bowl if needed.</li>
<li>While the machine is running, stream in the olive oil and process until distributed. Transfer to a bowl, cover and refrigerate until ready to serve.</li>
</ol>
<h4>To serve:</h4>
<ol>
<li>Mix the zucchini noodles with the pesto, stirring until all the noodles are coated (you can use clean hands if it's easier). Divide into two bowls and top with a few quinoa poppers and roasted tomatoes. Serve immediately. You'll likely have leftover quinoa poppers. Store them in an airtight container or Ziploc bag in the fridge or freezer.</li>

<p>Happy almost Christmas! Can you believe it&#8217;s almost here?</p>
<p>This is likely a very busy week for many of you, since you&#8217;re either a) running around like a crazy person trying to find last-minute gifts, b) have a whole lot of prepping, cooking, baking and gift wrapping to do, or c) are already in holiday mode and spending quality time with family and friends. Or perhaps you&#8217;re having a nice quiet week on your own, which is cool too!</p>

<p>In any case, I&#8217;ll keep this post short and sweet, much like the recipe&#8212;which I couldn&#8217;t wait to share with you because, well, I&#8217;m in love with this wholesome, make-ahead meal and I think it would make a fantastic seasonal Christmas morning breakfast. If you&#8217;ve got a house full of guests or a handful of little ones running around with excitement after Santa&#8217;s visit, and you know you won&#8217;t have much time to prep a decent morning meal, this cranberry apple spice overnight oatmeal is your solution.<span id="more-8052"></span></p>

<p>It&#8217;s super simple: stir together the oatmeal ingredients the night before and pop it in the fridge. In the morning, you&#8217;ll be all ready to go! I loved eating this oatmeal cold, but if you prefer something warm, just put it in a saucepan and gently heat until warmed through. Really, it&#8217;s delicious either way.</p>
<p>You can also serve this with toppings like chopped nuts, shredded coconut, pumpkin seeds, hemp seeds, more cranberries, etc. to make it even more fun!</p>

<li>2 cups rolled oats</li>
<li>2 tbsp chia seeds</li>
<li>3/4 tsp ground cinnamon</li>
<li>1/4 tsp allspice</li>
<li>pinch of sea salt</li>
<li>2 cups nondairy milk</li>
<li>1/2 cup <a href="/2014/12/slow-cooker-cranberry-applesauce/" target="_blank">cranberry applesauce</a> (see note)</li>
<li>1/4 cup pure maple syrup</li>
<li>2 tsp blackstrap molasses (don't skip this!)</li>
<li>1 cup fresh or frozen cranberries</li>
</ul>

<li>In a large mixing bowl, stir together all ingredients, except the cranberries, until combined. Stir in the cranberries. Cover and refrigerate overnight, or if you want to eat sooner, allow to sit for at least one hour.</li>
<li>Serve cold, or transfer to a large saucepan and heat over medium-low, stirring frequently, until warmed through. Add more nondairy milk to thin out, if desired. Serve with chopped nuts, shredded coconut, pumpkin seeds, hemp seeds, more cranberries, etc. to make it even more fun!</li>

<p>You know how sometimes you realize a simple ingredient in your pantry is not actually <em>totally</em> boring and, in fact, is more versatile and boasts a number of redeeming qualities that you suddenly develop a little crush on it? Yeah, that happened to me.</p>
<p>In recent years, I&#8217;ve come to see oats in a whole new light. Like, I went from childhood breakfasts of <a href="http://www.quakeroats.com/products/hot-cereals/instant-oatmeal/maple-and-brown-sugar.aspx" target="_blank">Quaker</a> instant oatmeal packets to making awesome stuff out of <a href="/tag/oats/" target="_blank">oats</a> like oat milk, oat flour, overnight oats and homemade granola&#8212;which is why I was so excited to see <a href="http://healthyslowcooking.com/" target="_blank">Kathy Heste</a>r&#8217;s new book, <em><a href="http://www.amazon.com/gp/product/1624140742/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=1624140742&amp;linkCode=as2&amp;tag=adasofcom-20&amp;linkId=AG7XB2NTBUYIMQS3" target="_blank">OATrageous Oatmeals</a></em>, land in my mailbox. Think of this book as a manifesto to oats, going beyond recipes you would think traditionally require them and inspiring new ways to use this simple yet versatile grain.</p>

<p>From <strong>mushroom sun-dried tomato steel-cut oat risotto</strong> and <strong>pepperoni crumbles</strong> to <strong>dreamy dark chocolate oat cream</strong> and <strong>coconut oat vanilla nut creamer</strong>, this book shows how you can make a meal out of oats any time of the day. For those who are not so adventurous, Kathy also includes new takes on old favourites, like oatmeal, overnight oats, granola, pancakes and biscuits. Plus, she goes beyond the kitchen and includes recipes for making your own body scrubs, bath soak and catnip kitty treats&#8212;all using oats! <p>I love that Kathy also takes into consideration a number of common allergens and special diets, and includes variations and additional information in each recipe, including soy-free, gluten-free, no added oil, sweeteners alternatives, and nutritional information.</p>
<p>There are so many recipes in this book I want to try, but so far I&#8217;ve made:</p>

<p>The <strong>easy oat milk yogurt</strong>&#8212;yes, that&#8217;s right, you can make yogurt out of oats! This was a very simple recipe that didn&#8217;t require anything more than rolled oats, water and a little plain non-diary yogurt. You have to cook it and then allow it to ferment overnight, but the result is a smooth, deliciously oaty yogurt that is far superiour (and much cheaper) than any store-bought brand. Mine turned out a bit thinner than the store-bought stuff I love so much, but that may have been an error on my part. I&#8217;ll be giving it another try soon!</p>

<p>These <strong>butternut squash maple walnut scones </strong>came together quite easily and made an awesome breakfast paired with homemade strawberry chia jam. Since I didn&#8217;t have butternut squash on hand, I followed the variation using pumpkin puree instead. I shared these with my colleagues and they got rave reviews.</p>

<p>The <strong>curry cashew savory granola </strong>is one of those recipes that piques your interest immediately, so it happened to be the first recipe I tried from this book. I dug out my <a href="http://www.arvindas.com/" target="_blank">favourite brand</a> of garam masala spice blend and boy, did it make the house smell amazing&#8212;that incredible, warming scent of homemade granola combined with fresh Indian spices. I added some larger cashew pieces for more crunch and I couldn&#8217;t stop snacking on it while trying to take photos! Needless to say, I&#8217;ll be doubling the batch next time I make it. <li>Preheat oven to 350F (177C) and either oil a cookie sheet or line it with parchment paper.</li>
<li>Add all ingredients but the salt to a medium-sized mixing bowl. Mix well, then add salt to taste.</li>
<li>Pour the mixture onto the prepared cookie sheet and press thin. You should have one large, flat piece about 1/4 to 1⁄8-inch thin. Bake for 20 to 25 minutes, until the edges are browned and the middle is no longer wet. Let cool on cookie sheet and break it up into large or small chunks with your hands. Use to top salads or plain yogurt, or just eat by the handful for a snack!</li>

<p>A little superpower is what I&#8217;m aiming for these days. After a very busy summer of recipe testing (and, naturally, a lot of taste testing) and photography for the book, I&#8217;m refocusing my goals for the next few months to <em>me</em>. That means pulling on my workout pants, fastening my workout bra (these babies need support) and tying up my running shoes. Thanks to the help of <a href="http://theblissfulchef.com/" target="_blank">Christy</a>, I&#8217;m hitting the gym at least four times a week and I&#8217;m feeling amazing.</p>
<p>They say exercise is only 20% of the equation though. Fueling your body with good food makes up for the rest.</p>
<p>With this new plan, I&#8217;m focusing on balancing macronutrients and, as always, adding lots of colourful veggies to my meals every day. While optimal macro ratios vary from person to person, I&#8217;m learning through meal-planning for my fitness goals that I feel my best on a plan of high complex carbs, moderately low protein and low fat.<span id="more-7567"></span></p>

<p>Where I fit in is among the city&#8217;s thriving vegan community (although we have yet to have a neighbourhood named after us), a diverse crowd of individuals who live up to their values of compassion and wellness. The point of connection for all of us is the <a href="http://veg.ca/" target="_blank">Toronto Vegetarian Association</a>, an amazing non-profit organization that works to inspire people through community events like the annual <a href="http://veg.ca/events/festival/" target="_blank">Toronto Vegetarian Food Festival</a> and the <a href="http://veg.ca/events/vegan-bake-off/" target="_blank">Totally Fabulous Vegan Bake-Off</a>.</p>

<p>Yesterday, I met up with TVA&#8217;s vegan bake-off organizing team for a lovely potluck brunch to celebrate the success of this year&#8217;s event (you can read my recap of this year&#8217;s bake-off <a href="/2013/02/torontos-totally-fabulous-vegan-bake-off/" target="_blank">here</a>). The smorgasbord of food included scrambled tofu, tempeh bacon, avocado, oatmeal bake, potato spinach squares, raspberry lemon muffins, mushroom asparagus tart and green macaroons. Thanks to the lovely <a href="http://www.veganculinarycrusade.com" target="_blank">Lisa</a>, you can find the recipes for the tart and macaroons <a href="http://veganculinarycrusade.com/2013/03/a-vegan-st-patricks-day-brunch/" target="_blank">here</a>.</p>
<p>Because granola is a favourite among us vegans, I decided to contribute the components for a spring-inspired granola parfait&#8212;a bowl of crunchy oat granola with seeds and dried fruit; a scoop of blueberry and apple jam; and topped with a thick vanilla cream made with coconut milk and cashews. It made for a delightful end to a delicious meal. And luckily, our hosts Luke and Drew were able to steal the leftovers in what they coined the Great Granola Heist of 2013.</p>

<li>1/4 cup water (omit if using light coconut milk)</li>
<li>1/4 cup pure maple syrup</li>

<li id="zlrecipe-instruction-2">In a smaller bowl, whisk together wet ingredients. Pour wet mixture into the bowl with the dry ingredients and combine thoroughly.</li>
<li id="zlrecipe-instruction-3">Spread out granola on dehydrator trays lined with Teflex sheets and dehydrate at 110F for about 4 hours, or until dry. Alternatively, preheat oven to 250F and spread out granola on a large cookie sheet. Bake for about 45 minutes or until lightly browned and dry.</li>

<li id="zlrecipe-instruction-5">Blend all ingredients in a high-speed blender until smooth. Transfer to a container and place in the fridge for an hour or more to thicken up.</li>

<li id="zlrecipe-instruction-7">Combine all ingredients in a large saucepan over medium heat. Bring to a boil and then reduce heat and simmer for 15 minutes. Remove from heat and puree with an immersion blender. Allow to cool and then store in the fridge until ready to use.</li>

				<content:encoded><![CDATA[<p>I have a very limited history with beets. As a child, they rarely landed on my dinner plate except, it seems, when we went to my grandmother&#8217;s house. Hers must have been either canned or boiled because, after one bite, I declared they were not for me. I grew up thinking I hated them, and I steered clear until I was in my late twenties.</p>
<p>Maybe my taste buds have changed but since then, beets have been a part of my regular rotation during the fall and winter along with most other root vegetables. I juice them, shred them for salads and sometimes roast them to bring out their flavour. Last week, I happened to buy a gigantic bunch of organic red beets, but since I was getting a little tired of adding them to my salads I decided to go another route and throw them in a batch of falafel. Call it an early Valentine&#8217;s Day meal if you wish, since red is <em>everywhere</em> this week.</p>

<p>I wish I had snapped a photo of the inside of these babies to show the beautiful specks of deep red throughout, but I didn&#8217;t, so you&#8217;ll have to trust me on this one. Underneath the crispy exterior, they are beautiful. I promise.</p>
<p>They are also super simple to throw together in your food processor. With these, you have the option to fry them like traditional falafel, or bake them if you wish. Then place them atop a luscious plate of greens and smother them in my favourite homemade tahini dressing.</p>

<p>Speaking of Valentine&#8217;s Day, Lisa and I put together <a href="/2013/01/vegan-valentines-day-gift-boxes/" target="_blank">special treat tins</a> to share this week. We filled them with three kinds of truffles, as well as raw brownies, moonie pies, chocolate chip almond cookies, white chocolate lavender cups and fig and hazelnut bars. I hope those who purchased the tins enjoy our handcrafted chocolate confections as much as we enjoyed creating them.</p>

<li>1 tsp ground coriander</li>
<li>1 tsp sea salt</li>

<li id="zlrecipe-instruction-1">Mince garlic in a food processor. Add the cilantro and parsley and pulse until finely chopped. Transfer to a large bowl.</li>
<li id="zlrecipe-instruction-2">Add chickpeas to the food processor and pulse to chop finely, but don't puree. Add chickpeas and remaining ingredients to the bowl. Mix everything together thoroughly (using your hands is best). The mixture should hold together when pressed between your hands.</li>
<li id="zlrecipe-instruction-3">Form into small balls (1 tbsp each) and press together firmly with your palms to form small patties.</li>
<li id="zlrecipe-instruction-4">You can either fry these lightly in oil or bake them. To fry, heat oil of your choice in a frying pan and cook falafel patties over medium-high heat for about 4 minutes, flip over and cook another 4 minutes, or until browned on both sides.</li>
<li id="zlrecipe-instruction-5">To bake, preheat oven to 350F. Place falafel patties on a baking sheet and brush tops lightly with oil of your choice. Bake for 20 minutes, turning over halfway through. Best served immediately with tahini dressing.</li>

<p>This particular granola, with its golden hue and warming spices, has been my comfort food during this otherwise dismal and very hostile transition to winter. I spend late evenings wrapped up in a thick, cozy comforter on the couch, hands wrapped around my favourite blue and black cereal bowl that is tucked up against my chest, perhaps subconsciously filling an emotional void, a fear of what&#8217;s to come when winter hits and the frigid, dark days become the norm.</p>

<p>Warming vegetable soups, maple-kissed oatmeal and spiced tea are my salvation until next spring. As is this granola, sometimes eaten straight up but most often drowned in a sea of almond milk and topped with a sprinkle of cinnamon.</p>
<p>I&#8217;ve made many granola adaptations over the years, but this is the first time I&#8217;ve added pumpkin puree to the mix. I wish I had thought of this earlier, because it makes for a fantastic binding agent for the oats and other dry ingredients. This is a very versatile recipe, so feel free to swap out the buckwheat, seeds or fruit for whatever you have on hand.</p>

<p>First, I should apologize because it doesn&#8217;t involve chocolate. I know the Easter holiday is upon us and food blogs are buzzing with chocolate-covered treats in the shape of eggs and bunnies, but if you prefer to err on the side of healthy during the holiday, I came up with these delightful cinnamon pecan truffles that can be made in less than 20 minutes.</p>

<p>First, let me confess that this recipe was not created out of a desire for speed. It happened on a very lazy Saturday not long ago; the kind of day where you sleep for the better half of the morning, and then transfer yourself to the couch for another nap, and the major event of the day is boiling the kettle to make tea. You catch up on a few emails and perhaps watch the beginning of a movie before passing out again. You consider going for a short run but opt for another nap instead.</p>
<p>Luckily for you, lazy days sometimes lead to impromptu kitchen creations using what I have available in my kitchen. I get bored, so I play.</p>

<p>The result is a batch of delicious, almost effortless truffles that remind me of cinnamon pecan buns, albeit a much healthier version. I&#8217;m pretty sure that&#8217;s what I was craving on that fateful day but I had no desire to roll out dough or turn on the oven.</p>
<p>Since we are all busy planning for the big Easter dinner or brunch this weekend—hopefully involving loads of fresh, spring vegetables and cruelty-free options—keeping the after-dinner work to a minimum is always welcomed. These truffles are no exception. <li id="zlrecipe-instruction-2">Roll the mixture into equally sized balls (I used a tablespoon measure) and cover with the cinnamon sugar topping.</li>

As far as I&#8217;m concerned, it can never come too soon, especially when I&#8217;ve got a long list of outdoor projects to accomplish. Yet, when I saw this weekend&#8217;s forecast (snow? scattered flurries?) this morning, my spring fever quickly took a nose dive.</p>
<p>Okay, so maybe the weather gods have some winter leftovers to get out of their systems before the sun starts shining again. Either way, I&#8217;m already starting to crave lighter, brighter, no-bake desserts that go along with the warmer months. One of my favourite summertime recipes involves a bright yellow lemon filling reminiscent of lemon meringue pie and made from a few simple ingredients that are lightly simmered on the stovetop and then chilled in the fridge until set.</p>
<p>The combination of fresh apple juice, lemons, maple syrup and almond milk never tasted so good.</p>

<p>After making my lemon filling recipe in tart form for a few years now (I recall teasing you with <a href="/2011/10/thanksgiving-up-north/" target="_blank">photos</a> last year), I decided it was time to create something just a little different. Enter my &#8220;sunshine in a jar,&#8221; a wholesome treat that layers an oat-nut crust, a fresh take on my lemon filling using <a href="http://localfoods.about.com/od/lemons/a/meyerlemons.htm" target="_blank">meyer lemons</a>, and a coconut whipped cream topping in individual mason jars (I used the 250ml size).</p>
<p>This is a great dessert for picnics or travel because you can snap on the jar lids to keep them safe from harm&#8217;s way. You could even take it a step further and decorate the jar lids with pretty fabric and ribbon for special occasions if you wanted to!</p>

<li id="zlrecipe-instruction-1">Using a food processor, process the oats, nuts and coconut flakes to a coarse meal.</li>
<li id="zlrecipe-instruction-2">Add the dates and salt and process until well combined. Add water as needed to form a mixture that sticks together when pressed between two fingers.</li>
<li id="zlrecipe-instruction-3">Press the mixture evenly into the bottom of four 250ml mason jars.</li>

<h4 id="zlrecipe-instruction-4">For the lemon filling:</h4>

<li id="zlrecipe-instruction-5">Pour the apple juice into a saucepan and sprinkle the agar flakes on top. Swirl the pan lightly to wet all the flakes and then set aside for about 20 minutes to allow the agar to soften.</li>
<li id="zlrecipe-instruction-6">In the meantime, measure out the maple syrup, 1/2 cup nondairy milk, salt and tumeric in a small bowl. In a separate bowl, whisk together the 2 tbsp nondairy milk and arrowroot. Finally, in another bowl or cup, measure out the meyer and regular lemon juices and zest.</li>
<li id="zlrecipe-instruction-7">Heat the apple juice and agar mixture over medium heat and cover the saucepan until it comes to a boil. Uncover, reduce the heat to low, and lightly stir the mixture to release the agar flakes from the bottom of the pan. Cover and simmer for about 10 minutes, or until the agar has completely dissolved.</li>
<li id="zlrecipe-instruction-8">Add the maple syrup mixture to the saucepan and lightly stir for about a minute. Next, add the arrowroot mixture and whisk to combine. Increase the temperature to medium and cook only until the mixture comes to a boil. Remove from heat and stir in the lemon juice mixture.</li>
<li id="zlrecipe-instruction-9">Pour the mixture into a bowl and allow to cool before pouring evenly over top of the crust in the mason jars. Place the jars in the fridge to set, about one hour. Top with coconut whipped cream.</li>

				<content:encoded><![CDATA[<p>Last month, I excitedly tweeted about a fantastic new banana loaf recipe I had just pulled out of the oven. I don&#8217;t often tease about upcoming recipes because, well, that&#8217;s just not nice. But I couldn&#8217;t help myself.</p>
<p>Let me explain.</p>
<p>A few days earlier, I was browsing through some of my favourite food blogs and came across an absolutely stunning <a href="http://g0lubka.blogspot.com/2011/12/3d-back-to-basics.html" target="_blank">post</a> on <a href="http://g0lubka.blogspot.com/" target="_blank">Golubka</a>. (If you haven&#8217;t visited that blog yet, you must go there. Now.) You see, I wasn&#8217;t necessarily looking for recipes to try out because, at that time, I felt like I really needed a break from the kitchen. I was essentially living vicariously through other people&#8217;s creations and bookmarking intriguing ideas to try after the holidays.</p>
<p>Have you ever come across a recipe that just screams &#8220;Make me!&#8221; That&#8217;s what <a href="http://g0lubka.blogspot.com/2011/12/3d-back-to-basics.html" target="_blank">this recipe </a>did to me.</p>

<p>I started with the basic bread recipe and got to work soaking, sprouting and dehydrating. Rather than sticking to a basic savoury flavour, I decided to make a new version of my beloved banana bread by adding bananas, walnuts, cinnamon and a touch of agave nectar. And boy, was I happy with the outcome. It results in a crispy outer crust and a nice, moist banana bread-like centre. The sprinkle of seeds on top is also a must.</p>
<p>The best part about this bread recipe is that there&#8217;s no need for flour, yeast or sugar. I experimented with two versions, one baked and one dehydrated, and I must admit that I liked the texure and taste of the baked version much better. Dehydrating does work, but I could detect a subtle fishy flavour from the Irish moss, so you might want to add more spices or other flavours if you prefer to use that method. Or, make sure to thoroughly rinse your Irish moss <em>several times</em> before making it into a paste! Lesson learned.<span id="more-1833"></span></p>

<p>Also, feel free to use whatever seeds you have on hand for this recipe. It seems quite versatile. I made two mini loafs, but you can easily make one large loaf or several small buns (or even bagels!) if you prefer. Keep in mind that you may need to adjust the baking time though. Enjoy!</p>

<li id="zlrecipe-ingredient-3" class="ingredient">1 cup sunflower seeds, preferably sprouted and dehydrated</li>

<li id="zlrecipe-instruction-0" class="instruction">Preheat the oven to 350F and line a cookie sheet with parchment paper or Silpat. Set aside.</li>
<li id="zlrecipe-instruction-1" class="instruction">Start by grinding the grains, flax seeds and sunflower seeds. I did it in batches using a spice grinder, but a high-speed blender will work, too.</li>
<li id="zlrecipe-instruction-2" class="instruction">In a large bowl, combine the ground grains and seeds. Add the sesame seeds, psyllium husks, cinnamon and salt and whisk together.</li>
<li id="zlrecipe-instruction-3" class="instruction">In a medium bowl, mash the bananas using a fork. Add the water, Irish moss paste, agave nectar and coconut oil and whisk until well combined and fairly smooth. (You can also do this step using a blender, if desired.)</li>
<li id="zlrecipe-instruction-4" class="instruction">Pour the wet mixture in the dry mixture and mix to form a dough. You might want to use your hands at this point. Fold in the chopped walnuts.</li>
<li id="zlrecipe-instruction-5" class="instruction">Transfer the dough to the prepared pan and shape into a loaf (I made two long, thin loafs).</li>
<li id="zlrecipe-instruction-6" class="instruction">Make the agave glaze by whisking together the agave and water. Brush the glaze over the top of the loaf and sprinkle with a mixture of seeds.</li>
<li id="zlrecipe-instruction-7" class="instruction">Bake the loaf at 350F for about one hour or until the loaf is golden and crispy to the touch. Allow to cool before slicing.</li>
