I took a few baking classes at a culinary school near me, and was amazed to find how much of a difference there can be in measurements, depending on whether flour is sifted, or even due to discrepancies in the actual measuring cups. I generally don&#039;t weigh ingredients when I&#039;m making cookies, for example, but I find that it&#039;s necessary when making things like bread.

This was a nice refresher for me about taking a little extra time when I&#039;m baking to get the measurements right. :)]]></description>
