Welcome! I’m glad you’re here.
My name is Nicole and I’m a Canadian writer, editor, photographer, and mother of three quirky rescue cats, Leola, Eli and Zoey. I love animals too much to eat them, and I’ve discovered that teaching others through food is an effective vegan outreach tool—otherwise known as baketivism. I began developing wholesome, all-natural vegan recipes to inspire others to think differently about what they eat, and this blog is my growing collection of favourites.
In 2010, I had the opportunity to perfect my craft by completing the Vegan Baking Boot Camp Intensive training program at the Natural Gourmet Institute in NYC. In 2012, I became certified in plant-based nutrition through Cornell University and the T. Colin Campbell Foundation. I’m currently an editor and photographer for Definition, a popular health and fitness magazine for plant-powered ladies.
As a vegan for 14 years, I can tell you from experience that this lifestyle is not about restriction or deprivation—you won’t be doomed to a life of lettuce and tofu. A plant-based diet is abundant in wholesome, filling foods with exciting flavours, all of which can satisfy your hunger and cravings without harming your health, the environment or the animals.
If you enjoy healthy, whole-food-based desserts, please consider picking up a copy of one or both of my ebooks, Tiny Treats and Edible Gifts, both of which are co-authored with Lisa Pitman. Our first published cookbook, DIY Vegan, will be available in October 2015! You can also find my recipes on a number of websites, so check out my press page.
