The bottom crust goes up the sides of the muffin tin, much like tart crusts would. Then fill with the strawberry rhubarb filling and top with more pastry crust that has been cut into lattice strips (these should be pressed lightly against the edge of the first crust to hold together). I hope you get a chance to try them!

When you cut the circles for the bottom crust, did that go up the sides of the muffin tins, or did they just sit on the bottom? Kind of like a rhubarb sandwich, with the side being open? They really look delicious. I’ll have to try these.

Those are beautiful! I love the mini pie idea. I have loads of strawberries from my CSA. I may have to go pick up so rhubarb and make some pie this weekend!

I don’t have permission from the publisher to post it here, but I included the link to Isa and Terry’s strawberry rhubarb crumble pie in the post above. I used that recipe as my base, but used a lattice top instead of the crumble, and a muffin pan instead of a pie plate.
